This is delectable and only 215 calories a slice (8 slices total)! First I will share my crust recipe then the strawberry filling recipe.
Preheat oven to 400°
1 1/2 cups all purpose flour
2 tspns sugar
1 tspn salt
2 tbspn milk
1/2 cup veggie oil
Place all ingredients in a 9 inch pie pan and mix with a fork. Pat it to the bottom and around the edges. Poke with holes and bake for 15 minutes or until light brown. Set aside to cool.
3 pints fresh or frozen strawberries(cut in halves)
3/4 cup of sugar (can use alternatives)
2 tbspn corn starch
1/2 cup of water
In a medium sauce pan heat 1 pint cut strawberries and sugar over medium high heat. Mush the strawberries with the back of a spoon as they cook down to release juice and flavor. Mix the corn starch and water and put into the strawberry mix when it is thick and syrupy. Cook for 2 to 3 minutes. Set aside and let it cool completely. Once it has cooled put into pie shell and refrigerate for at least 2 hours. Serve cold with whipped topping.
This is a sweet dessert and it will taste like it is full of naughtiness..but it isn't horrible. Enjoy y'all!
